(#2927) Document symbolic modes in mode parameter

This commit documents symbolic modes (added to the file type in issue #2927).

  • Mention that the magic search bit behavior only applies to numeric modes
  • Add brief syntax for symbolic modes
  • Add brief syntax for numeric modes
  • Explicitly call out that we translate Unix permissions as a metaphor on other platforms
