Docker compose setup enhancements:

• Remove orphans when bringing the docker-compose down
• Start the KMS
• Replace -D openvidu options with env variables (they do the same)
• Configure OPENVIDU_PUBLICURL and remove HTTP_PORT and HTTPS_PORT that are not required.

In my case:

• OPENVIDU_PUBLICURL=https://xtian.dev.kolab.io/openvidu
• SERVER_PORT=${OPENVIDU_SERVER_PORT}
